Easy Penne Pasta Salad Recipe
Ingredients:
- 1 pound of penne pasta
- 1/2 cup olive oil
- 1/2 cup red wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon salt

- 1/4 cup chopped fresh basil
- 2 cups cherry tomatoes, halved
- 1/2 red onion, sliced
- 1/2 cup crumbled feta cheese

- Cook the penne pasta according to the package directions, until it’s al dente.
- While the pasta is cooking, prepare the dressing. In a small bowl, whisk together the olive oil, red wine vinegar, minced garlic, salt, black pepper, and chopped fresh basil.
- Once the pasta is cooked, drain it and rinse it under cold water to stop the cooking process.
- In a large bowl, combine the cooked pasta with the cherry tomatoes, sliced red onion, and crumbled feta cheese.
- Pour the dressing over the pasta salad and gently stir until everything is coated in the dressing.
- Chill the pasta salad in the refrigerator for at least an hour before serving.
